Ma Po Tofu is a classic Sichuan dish that combines tofu with a spicy and savory sauce. Now here's how to make this food at home
Ingredients:
1 block of firm tofu
1/2 pound ground pork
2 tablespoons vegetable oil
2 cloves garlic, minced
1 tablespoon ginger, minced
1 tablespoon chili bean paste (doubanjiang)
{1 tablespoon fermented black beans, rinsed and chopped}
1 tablespoon Sichuan peppercorns, toasted and ground
1/2 cup chicken stock
2 tablespoons soy sauce
1 teaspoon sugar
1 tablespoon cornstarch
1/4 cup water
2 green onions, chopped
1 teaspoon sesame oil
Instructions:
Cut the tofu into cubes of about 1 inch, then keep it aside.
Heat vegetable or sweet oil in a large pan or wok on a low flame.
Add the ground pork and cook until browned, breaking up any clumps with a spoon.
Add the garlic, ginger, chili bean paste, fermented black beans, and Sichuan peppercorns. Stir-fry for 30 seconds.
Pour in the chicken stock, soy sauce, and sugar. Bring to a simmer.
Add the tofu and gently stir to coat with the sauce. Simmer for 5-7 minutes, or until the tofu is heated through.
In a small bowl, whisk together the cornstarch and plenty of purified water. Stir the cornstarch mixture into the wok and cook for another 1-2 minutes, or until the sauce thickens.
Remove from heat and stir in the green onions and sesame oil.
Serve with steamed rice.
