Veg biryani is a popular Indian dish that is made by layering spiced vegetables and rice in a pot and cooking it slowly over low heat. It is a perfect one-pot meal that is both nutritious and flavorful. Here is a recipe for veg biryani that serves four people.
Ingredients:
2 cups basmati rice
3 cups water
1 large onion, sliced
1 medium-sized carrot, chopped
1 medium-sized potato, chopped
1/2 cup green peas
1/2 cup green beans, chopped
1/2 cup cauliflower florets
1/4 cup cashews
1/4 cup raisins
2 tablespoons ghee or oil
1 bay leaf
1 cinnamon stick
2-3 green cardamom pods
2-3 cloves
1 teaspoon cumin seeds
1 teaspoon ginger paste
1 teaspoon garlic paste
2 teaspoons biryani masala
1/4 teaspoon turmeric powder
1/4 teaspoon red chili powder
1/4 teaspoon garam masala
Salt to taste
Fresh coriander leaves for garnishing
Instructions:
Wash the rice thoroughly and soak it in water for 30 minutes. Drain the water and keep the rice aside.
Heat ghee or oil slowly in a large pot or pan on medium heat in the oven. Add bay leaf, cinnamon stick, green cardamom pods, and cloves. Saute the spices for 2 minutes till the smell comes.
Add sliced onions and fry until golden brown. Add ginger paste and garlic paste and sauté for 1-2 minutes until fragrant.
Add chopped carrots, potatoes, green beans, cauliflower florets, and green peas. Mix well and cook for 2-3 minutes.
Add biryani masala, turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for another 2-3 minutes.
Add soaked rice to the pot and stir gently until the rice is well coated with the spice mixture.
Add 3 cups of water and stir well. Cover the pot with a tight-fitting lid and let it cook over low heat for 20-25 minutes or until the rice is cooked and the water is absorbed.
In a small pan, fry cashews and raisins in a little ghee until golden brown.
Once the rice is cooked, turn off the heat and let it rest for 5 minutes. And, whisk the rice with a spoon.
Garnish the biryani with fried cashews, raisins, and fresh coriander leaves.
Your delicious veg biryani is now ready to serve!
