 Misal Pav is a popular Maharashtrian street food that is known for its spicy and tangy flavors. It is made using sprouted moth beans (matki) and a special misal masala, which gives it its unique taste. This dish is usually served with pav (a type of bread) and topped with chopped onions, coriander leaves, farsan (a type of snack) and lemon juice. Here is a step-by-step recipe to make Misal Pav at home.


Ingredients:


1 cup sprouted moth beans (matki)

2 medium-sized onions, finely chopped

2 medium-sized tomatoes, finely chopped

1 tablespoon ginger-garlic paste

2 green chilies, finely chopped

1 tablespoon oil

1 teaspoon mustard seeds

1 teaspoon cumin seeds

1 teaspoon turmeric powder

1 teaspoon red chili powder

1 tablespoon coriander powder

1 tablespoon cumin powder

1 teaspoon garam masala powder

Salt to taste

3 cups water

Lemon wedges, chopped onions, coriander leaves, and farsan to garnish

Pav to serve

Instructions:


Firstly, take 1 cup of sprouted moth beans (matki) and rinse it thoroughly with water. Then, soak it in 2 cups of water for about 4-5 hours or overnight.


After the soaking period, drain the water from the moth beans and add it to a pressure cooker along with 3 cups of fresh water and salt to taste. Pressure cook it for about 3-4 whistles or until the beans are cooked well.


In a separate pan, heat 1 tablespoon of oil and add 1 teaspoon of mustard seeds and 1 teaspoon of cumin seeds. Once they splutter, add 2 finely chopped onions and sauté until they turn translucent.


Then, add 1 tablespoon of ginger-garlic paste and 2 finely chopped green chilies. Sauté for a minute until the raw smell of ginger-garlic paste goes away.


Next, add 2 finely chopped tomatoes and cook until they turn mushy.


Once the tomatoes are cooked well, add 1 teaspoon of turmeric powder, 1 teaspoon of red chili powder, 1 tablespoon of coriander powder, 1 tablespoon of cumin powder, 1 teaspoon of garam masala powder, and salt to taste. Mix well and then cook for about a minute.


Now, add the cooked moth beans along with its water to the pan and mix well. Bring it to a boil and let it simmer for about 10-15 minutes until the masala is well infused with the beans.


To serve, take a bowl and add the misal to it. Top it up with chopped onions, coriander leaves, farsan, and a squeeze of lemon juice.


Serve hot with pav on the side.


Tips:


If you do not have a pressure cooker, you can cook the moth beans in a pot on the stove. It might take a little longer, but the end result will be the same.


Adjust the spice levels according to your preference. You can add more or less chili powder and green chilies based on how spicy you want it to be.


Misal Pav tastes best when it is hot and fresh. Therefore, after making it, serve it immediately.


You can also add boiled potatoes or sprouted moong beans along with the moth beans to enhance the nutritional value of the dish.
