Shahi paneer is a popular North Indian dish that is rich, creamy and packed with flavors. It's a vegetarian dish that is made using paneer, a type of Indian cheese, in a tomato-based gravy. Here's a simple recipe for shahi paneer that serves four people.
Ingredients:
400g paneer
3 medium-sized onions
4 medium-sized tomatoes
2 green chilies
1 inch ginger
4-5 garlic cloves
1/4 cup cream
1/4 cup milk
1/2 tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
1 tsp cumin powder
1/2 tsp garam masala powder
1/2 tsp kasuri methi (dried fenugreek leaves)
Salt to taste
2 tbsp oil
2 tbsp butter
1 tbsp chopped coriander leaves for garnish
Instructions:
Start by preparing the paneer. Cut it into small cubes and fry them in hot oil until they turn golden brown. Take them out of the pan and then keep them aside.
Finely chop the onions, tomatoes, green chilies, ginger, and garlic. Heat a tablespoon of oil and a tablespoon of butter in a pan and add the chopped onions. Fry them until they turn light brown.
Add the chopped ginger, garlic, and green chilies to the pan and fry for another minute.
Put chopped tomatoes in a pan and mix well. Cook that tomato until it becomes soft or mushy.
Allow the mixture to cool down and then transfer it to a blender. Blend the mixture until it turns into a smooth paste.
Heat a tablespoon of oil and a tablespoon of butter in the same pan and add the tomato paste. Cook that paste for 2 to 3 minutes till it becomes thick.
Add turmeric powder, red chili powder, coriander powder, cumin powder, and garam masala powder to the pan and mix well.
Add salt to taste and cook for another 2-3 minutes until the spices are well incorporated.
Add cream and milk to the pan and mix well. Cook for another 2-3 minutes until the gravy thickens.
Add fried paneer cubes to the pan and mix well. Cook for 2-3 minutes until the paneer is well coated with the gravy.
Crush the dried fenugreek leaves between your palms and add them to the pan. Mix well and cook for another minute.
Garnish with chopped coriander leaves and serve hot with rice, naan or roti.
