Ingredients:


1 pound thinly sliced beef (you can also use lamb or pork)

1 pound shrimp, peeled and deveined

1 pound firm tofu, sliced into cubes

1 head of napa cabbage, chopped

1 bunch of scallions, chopped

1 bunch of cilantro, chopped

1 cup stuffed finely chopped mushrooms (such as shiitake or oyster)

1 cup sliced carrots

1 cup sliced daikon radish

1 cup sliced water chestnuts

1 package of rice noodles

1 tablespoon vegetable oil

2 cloves of garlic, minced

8 cups of chicken or beef broth

Salt and pepper to taste

Dipping Sauce:


1/2 cup soy sauce

1/4 cup rice vinegar

2 tablespoons sesame oil

2 tablespoons chopped scallions

2 tablespoons chopped cilantro

1 tablespoon chopped garlic

1 tablespoon sugar

1 teaspoon chili oil (optional)

Instructions:


Prepare all the ingredients by washing and slicing them as directed.


To make the dipping sauce, mix together the soy sauce, rice vinegar, sesame oil, scallions, cilantro, garlic, sugar, and chili oil (if using) in a small bowl. Set aside.


Heat the vegetable oil in a large pot or wok over medium-high heat. Now add garlic, after that cook for about 30 seconds until fragrant.

Pour in the chicken or beef broth and bring to a simmer.


Add the sliced mushrooms, carrots, daikon radish, and water chestnuts to the pot. Cook for 5-7 minutes, or until the vegetables are tender.


Add the sliced tofu and shrimp to the pot and cook for an additional 2-3 minutes, or until the shrimp are pink and cooked through.


Season the hot pot with salt and pepper to taste.


To cook the rice noodles, bring a pot of water to a boil and cook the noodles according to the package instructions. Drain and rinse with cold water.


To serve, divide the cooked ingredients into bowls and ladle the hot broth over them. Top with chopped scallions and cilantro.


Serve the dipping sauce alongside the hot pot for dipping the cooked ingredients.
