Ingredients:
2 cups dried chickpeas, soaked overnight
1 onion, chopped
6 cloves garlic, minced
1 cup fresh parsley, chopped
1 cup fresh cilantro, chopped
1 tablespoon cumin powder
1 tablespoon coriander powder
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon black pepper

Instructions:
Drain the soaked chickpeas and rinse them well. Place them in a food processor or pulse until the mixture is coarse and grainy. Do not over-process the mixture as it should not become a paste.
Add the chopped onion, minced garlic, fresh parsley, and fresh cilantro to the chickpea mixture. Pulse the mixture a few more times until the ingredients are well combined.
In a small bowl, mix together the cumin powder, coriander powder, baking powder, salt, and black pepper. Add this spice mixture to the chickpea mixture and pulse until it is well combined.
Cover the mixture and refrigerate it for at least 30 minutes or up to 2 hours. This will help the mixture to firm up and make it easier to shape into balls.
Preheat the oil in a deep frying pan or a deep fryer to 350°F (180°C).
