 Dal Tadka is a popular Indian dish made with lentils, tempered with aromatic spices, and finished with a drizzle of ghee or butter. It is a delicious and nutritious dish that can be enjoyed as a main course with rice or Indian bread. In this recipe, we will be using yellow split lentils (also known as moong dal) to make the dal tadka.


Ingredients:


1 cup yellow split lentils (moong dal)

3 cups water

1/2 teaspoon turmeric powder

1 teaspoon salt

2 tablespoons ghee or butter

1 teaspoon cumin seeds

1 teaspoon mustard seeds

1/2 teaspoon asafoetida (hing)

2-3 dried red chilies

1 onion, finely chopped

1 tomato, finely chopped

1 tablespoon ginger-garlic paste

1/2 teaspoon red chili powder

1/2 teaspoon coriander powder

1/2 teaspoon garam masala powder

2 tablespoons chopped coriander leaves (cilantro) for garnishing

Instructions:


Wash that dal in clean water until completely clear water starts coming out. Then, soak the lentils in water for 30 minutes.


Drain the lentils and transfer them to a pressure cooker. Add 3 cups of water, turmeric powder, and salt. Mix well.


Cover the pressure cooker and cook the lentils for 3-4 whistles or until they are soft and fully cooked.


Once the pressure cooker cools down, open the lid and whisk the lentils until they are smooth and creamy. Set aside.


Heat ghee or butter in a pan over medium heat. Add cumin seeds and mustard seeds. When they start to splutter, add asafoetida and dried red chilies. Fry for a few seconds.


Add chopped onions and fry until they are soft and translucent.


Add ginger-garlic paste and fry until the raw smell disappears.


Add chopped tomatoes and fry until they are soft and mushy.


Add red chili powder, coriander powder, and garam masala powder. Fry for a minute.


Add the cooked lentils to the pan and mix well. If the dal tadka is too thick, add some water to adjust the consistency.


Simmer the dal tadka for 5-10 minutes over low heat, stirring occasionally.


Now turn off the flame and serve after garnishing with coriander leaves.


Serve hot with rice or Indian bread.


Tips:


You can also make this recipe in a regular pot if you don't have a pressure cooker. Just cook the lentils in a pot with a lid until they are fully cooked and soft.

You can adjust the spiciness of the dal tadka by adding more or less red chili powder and dried red chilies.

To make the dal tadka vegan, use oil instead of ghee or butter.

If you don't have fresh tomatoes, you can use canned tomatoes or tomato puree instead.
