Ingredients:
1 whole chicken (about 3-4 pounds)
10 cups of water
2 onions, chopped
3 carrots, peeled and chopped
3 celery stalks, chopped
4 garlic cloves, minced
1 tablespoon of fresh thyme leaves
1 bay leaf
1 teaspoon of salt
1/4 teaspoon of black pepper
2 cups of egg noodles
Fresh parsley, chopped (optional)
Instructions:
Rinse the chicken inside and out with cold water, and pat it dry with paper towels. Remove any excess fat, and place the chicken in a large pot or Dutch oven.
Pour 10 cups of water into the pot, making sure the chicken is fully submerged. Bring the water to a boil, and then reduce the heat to low. Cover the pot and let it simmer for about an hour, or until the chicken is fully cooked and tender.
Once the chicken is cooked, use tongs to remove it from the pot and set it aside to cool. Strain the chicken broth through a fine-mesh sieve into a large bowl, and discard any solids.
