 Samosa is a popular Indian snack that is enjoyed by people all over the world. It is a savory pastry that is filled with spiced vegetables or meat and then deep-fried or baked. It is often served with chutneys or sauces and is perfect for snacking or as an appetizer. In this recipe, we will be making vegetarian samosas.


Ingredients:


For the dough:


2 cups all-purpose flour


1/2 teaspoon salt


1/4 cup vegetable oil


1/2 cup water


For the filling:


2 tablespoons vegetable oil


1 teaspoon cumin seeds


1 teaspoon coriander seeds


1/2 teaspoon fennel seeds


1 teaspoon grated ginger


1 teaspoon minced garlic


1/2 teaspoon turmeric


1/2 teaspoon cayenne pepper


1 teaspoon garam masala


1 cup diced potatoes


1/2 cup diced carrots


1/2 cup green peas


1/2 teaspoon salt


2 tablespoons chopped cilantro


For frying:


Oil for deep frying


Instructions:


To make your dough, in a large mixing bowl or large bowl, combine the flour and salt. Add the vegetable oil and mix until the mixture is crumbly.


Gradually add the water and mix until the dough comes together. knead the dough until it becomes smooth and pliable.


Cover the dough with a wet cloth and keep it for 25-30 minutes.


While the dough is resting, make the filling. Heat the vegetable oil in a large pan over medium heat.


Add the cumin seeds, coriander seeds, and fennel seeds and cook for a minute or until fragrant.


Add the ginger and garlic and cook for another minute.


Add the turmeric, cayenne pepper, and garam masala and stir for a few seconds.


Add the diced potatoes, carrots, green peas, and salt. Mix well.


Cover the pan and cook the vegetables for 15-20 minutes or till they become soft.


Remove the pan from the heat and stir in the chopped cilantro.


Heat oil on low flame to fry it


Divide the dough into equal parts and roll each part into a ball.


Roll each ball into a thin circle and cut it in half.


Take one half and form it into a cone shape, sealing the edges with a little water.


Fill the cone with 1-2 tablespoons of the vegetable filling and seal the top by applying a little water to the edges.


Repeat the process with the remaining dough and filling.


When the oil is hot, carefully drop a few samosas into the oil and fry them for 4-5 minutes or until they are golden brown.


Remove the samosas from the oil using a slotted spoon and place them on a paper towel to drain any excess oil.


Serve the samosas hot with chutney or sauce of your choice.


Tips:


You can also bake the samosas instead of deep frying them. Preheat the oven to 400°F and place the samosas on a baking sheet lined with parchment paper. Brush them with oil and bake for 20-25 minutes or until they are golden brown.


If you don't have all of the spices for the filling, you can use a pre-made spice mix like curry powder or garam masala.
