Ingredients:


1 packet of Maggi noodles


1 cup of water


1 tablespoon of oil


1 onion, finely chopped


1 tomato, finely chopped


1 green chilli, finely chopped (optional)


1/2 teaspoon of ginger-garlic paste


1/2 teaspoon of cumin seeds


1/2 teaspoon of red chilli powder


1/2 teaspoon of turmeric powder


1/2 teaspoon of coriander powder


Salt to taste


Fresh coriander leaves for garnish


Instructions:


In a pan, heat one tablespoon of oil over medium heat. After it becomes hot, add cumin and let it splutter.

Add finely chopped onion and sauté for a few minutes until it turns golden brown.


Add the garlic-ginger paste and continue to fry for a minute or till the raw smell disappears.


Add finely chopped tomato and green chilli (if using) and cook for a few minutes until the tomato turns soft.


Add all the spices – red chilli powder, turmeric powder, coriander powder and salt – and mix well.


Add one cup of water and bring it to a boil.


Once the water comes to a boil, add the Maggi noodles and cook for 2-3 minutes or until the noodles are soft.


Turn off the heat and let the Maggi sit for a minute.


Garnish with fresh coriander and serve hot.


Variations:


Vegetable Maggi: Add chopped vegetables like carrots, peas, capsicum and beans along with the spices to make it more nutritious.


Egg Maggi: Boil an egg and chop it into small pieces. Add it to the Maggi along with the spices for an added protein boost.


Cheese Maggi: Add grated cheese on top of the Maggi while it's still hot and mix well. The cheese will melt and give it a creamy texture.
