 Pongal is a popular South Indian dish that is typically made during the harvest festival of the same name. It is a savory dish made with rice, lentils, and spices, and is typically served with sambar, chutney, and ghee. Here is a recipe for making Pongal at home:


Ingredients:


1 cup of rice

1/2 cup of moong dal

4 cups of water

1/2 teaspoon of cumin seeds

1/2 teaspoon of black pepper

1/2 teaspoon of grated ginger

1/4 teaspoon of turmeric powder

1 teaspoon of ghee

Salt to taste

Cashews and raisins (optional)

Instructions:


Rinse the rice and moong dal in cold water until the water runs clear. Soak the rice and moong dal in water for about 20-30 minutes.


In a large pot or pressure cooker, add the soaked rice and dal with 4 cups of water. Add turmeric powder and salt and mix well.


Heat the pot on medium-high heat until it starts boiling. If using a pressure cooker, close the lid and cook on high pressure for 4-5 whistles. If using a regular pot, cover it with a lid and cook for about 20-25 minutes, stirring occasionally to make sure the rice and dal don’t stick to the bottom.


Once the rice and dal are cooked, turn off the heat and let it cool for a few minutes.


In a separate pan, heat ghee on low heat. Add the cumin seeds, black pepper, and grated ginger, and sauté for a few seconds until fragrant.


If using cashews and raisins, add them to the pan and fry until the cashews are golden brown.


Add the sautéed spices, ghee, cashews, and raisins to the cooked rice and dal. Mix well.


Adjust the seasoning to taste and serve hot with sambar, chutney, and additional ghee if desired.


Tips:


You can adjust the consistency of Pongal by adding more or less water while cooking.

You can also add vegetables like carrots, peas, or beans to the Pongal for added flavor and nutrition.

Make sure to use good quality ghee for the best taste.

Pongal can be stored in an airtight container in the refrigerator for up to 2-3 days. Reheat it in a pan with a little bit of water or milk before serving.
