250 g paneer, cubed

2 tbsp butter
1 tsp cumin seeds
1 tsp red chilli powder
1/2 tsp turmeric powder

Instructions:
In a pan, heat 1 tablespoon of butter and add the cubed paneer. Fry the paneer till it turns golden brown from all the sides. Remove from the pan and keep aside.
In the same pan, add 1 tablespoon of butter and cumin seeds. When the seeds start to splutter, add chopped onions and sauté until they turn translucent.
Add ginger-garlic paste and green chillies to the pan and sauté for 1-2 minutes until the raw smell disappears.
Add chopped tomatoes and sauté until they turn mushy.
Drain the soaked cashew nuts and add them to the pan. Add 1/2 cup of water and let the mixture simmer for 5-7 minutes until the cashews are soft.

In a pan, add the puree, red chilli powder, turmeric powder and salt. Add water as required and bring the mixture to a boil.
Once the mixture starts boiling, add the fried paneer to the pan and let it cook for 2-3 minutes.
Add garam masala powder and dried fenugreek leaves to the pan and mix well.
Turn off the heat and add fresh cream to the pan. Mix well and let the paneer butter masala simmer for 1-2 minutes.
Garnish with coriander leaves and serve hot with naan, roti or rice.

You can adjust the spice level of the paneer butter masala by adding more or less red chilli powder and green chillies.
