 Chicken Butter Recipe


Chicken Butter, also known as Chicken Makhani, is a classic Indian dish that is creamy, spicy, and absolutely delicious. This recipe makes use of a wide array of aromatic spices and ingredients, which blend together perfectly to create a wonderful depth of flavor. The dish is typically served with rice or naan bread, and can be made to be as mild or spicy as you like.


Ingredients:


4 skinless, boneless, chicken breasts, diced.

1 onion, chopped

4 garlic cloves, minced

1 tsp ginger paste

1 tsp ground cumin

1 tsp ground coriander

1 tsp turmeric

1/2 tsp chili powder

1/4 tsp cayenne pepper (optional)

1 cup tomato puree

1 cup heavy cream

1/4 cup butter

Salt, to taste

Fresh cilantro, chopped, for garnish

Instructions:


Begin by heating the butter in a large pan over medium heat. Once the butter has melted, add in the onion and cook until it has softened, stirring frequently. This should take around 5 minutes.


Next, add in the minced garlic and ginger paste, stirring well to combine. Continue cooking for another 2-3 minutes, until the mixture becomes fragrant.


Add the ground cumin, coriander, turmeric, chili powder, and cayenne pepper (if using) to the pan, stirring well to combine. Cook for a further 2-3 minutes, until the spices become fragrant and start to stick to the bottom of the pan.


Add in the tomato puree, stirring well to combine. Cook for a further 2-3 minutes, until the mixture has thickened slightly.


Add in the chicken chunks and stir well to coat them in the tomato sauce. Cook for around 10-15 minutes, until the chicken is cooked through and tender.


Add in the heavy cream and stir well to combine. Allow the mixture to simmer for around 5 minutes, until the sauce has thickened and the flavors have blended together.


Taste the mixture Aur add salt namak to taste.


Serve the chicken butter with rice or naan bread. Garnish with fresh cilantro and enjoy!


Tips:


To make the dish spicier, increase the amount of chili powder and cayenne pepper used. To make it milder, reduce the amount of these ingredients.

For a healthier version of this dish, substitute heavy cream with coconut milk or Greek yogurt.

The chicken can be marinated in a mixture of yogurt, ginger paste, garlic paste, and some spices like cumin, coriander, turmeric, and chili powder for a few hours or overnight to enhance the flavor and make it more tender.

To save time, you can use pre-cooked chicken or leftovers instead of cooking the chicken from scratch. Just add the cooked chicken to the sauce and let it simmer for a few minutes until it is heated through.
