 White sauce pasta is a classic Italian dish that is creamy and delicious. It's easy to make and can be customized with your favorite vegetables, meat or seafood. Here's a simple recipe for white sauce pasta that serves 4 people.


Ingredients:


1 pound pasta (fettuccine, penne or spaghetti)

1/4 cup unsalted butter

1/4 cup all-purpose flour

2 cups milk

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon nutmeg

1/2 cup grated Parmesan cheese

Optional ingredients:


1 cup chopped vegetables (broccoli, mushrooms, bell peppers, etc.)

1 cup cooked chicken or shrimp

Instructions:


Cook pasta according to package directions in a large pot of salted water.Drain the pasta and set it aside.


If you're adding vegetables, cook them in boiling water for 2-3 minutes until they are tender. Drain and set aside.


In the same medium saucepan, melt the butter over low heat.  After melting the butter, add the flour and keep on stirring till smooth. Cook for 1-2 minutes, stirring constantly.


Pour in milk slowly, stirring continuously to prevent lumps.  Wait for 6-7 minutes or till the sauce thickens and coats the back of a spoon.


Add salt, pepper, and nutmeg to the sauce and stir to combine.


Add the Parmesan cheese and stir until the cheese has melted and the sauce is smooth.


If you're adding cooked chicken or shrimp, add it to the sauce and stir until heated through.


Add the cooked pasta and vegetables (if using) to the sauce and stir until the pasta is coated with the sauce.


Serve hot, garnished with additional Parmesan cheese and chopped fresh herbs (if desired).


Tips:


To make the sauce smoother, you can strain it through a fine-mesh sieve to remove any lumps.

If the sauce is too thick, you can add more milk to make it thinner and workable.

For a richer flavor, you can substitute half-and-half or heavy cream for the milk.
