Soya chaap is a popular vegetarian delicacy in India, especially in the northern parts of the country. It is made from soy protein and is a great alternative to meat-based dishes. Soya chaap is known for its soft and chewy texture and its ability to absorb flavors easily. Here's a simple recipe for making soya chaap at home:
Ingredients:
Soya chaap: 500 grams
Yogurt: 1 cup
Ginger garlic paste: 2 tablespoons
Cumin powder: 1 tablespoon
Coriander powder: 1 tablespoon
Garam masala: 1 tablespoon
Red chili powder: 1 teaspoon
Salt: to taste
Oil: for frying
For the marinade:
Hung curd: 1/2 cup
Ginger paste: 1 teaspoon
Garlic paste: 1 teaspoon
Turmeric powder: 1/4 teaspoon
Red chili powder: 1/2 teaspoon
Coriander powder: 1/2 teaspoon
Cumin powder: 1/2 teaspoon
Garam masala: 1/2 teaspoon
Salt: to taste
Instructions:
Begin by preparing the marinade for the soya chaap. In a mixing bowl, add hung curd, ginger paste, garlic paste, turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt. Mix that better to make a smooth paste.
Cut the soya chaap into 2-3 inch pieces and wash them well in running water. Then, boil them in salted water for 5-7 minutes until they become soft and tender. Drain the water and keep the soya chaap aside.
Add the boiled soya chaap pieces to the marinade and coat them well with the masala paste. Cover the bowl with a lid and refrigerate for at least 2 hours to let the flavors soak in.
After 2 hours, preheat the oven to 180 degrees Celsius. Grease a baking tray with oil.
Arrange the marinated soya chaap pieces on the baking tray and bake in the preheated oven for 10-15 minutes until they turn golden brown. Alternatively, you can also deep fry the marinated soya chaap pieces until they turn crispy and golden brown.
While the soya chaap pieces are baking/frying, prepare the gravy. In a mixing bowl, add yogurt, ginger garlic paste, cumin powder, coriander powder, garam masala, red chili powder, and salt. Mix well to form a smooth paste.
Heat a pan with 2 tablespoons of oil. Add the yogurt mixture to the pan and cook for 2-3 minutes until it starts to thicken.
Add the baked/fried soya chaap pieces to the pan and mix well with the gravy. Cook for another 2-3 minutes until the gravy coats the soya chaap pieces evenly.
Garnish with coriander leaves and serve hot with roti, naan, or rice.
Tips:
You can adjust the spices according to your taste preferences.
Soya chaap is quite bland on its own, so make sure to marinate it well and use a flavorful gravy.
If you don't have an oven, you can pan fry the marinated soya chaap pieces instead of baking them.
You can also use a tandoor or grill to cook the soya chaap pieces for a smoky flavor.
