 Sambar is a delicious and nutritious South Indian lentil soup that is traditionally served with rice, idli, dosa, or vada. It is a popular and versatile dish that can be made with a variety of vegetables and lentils. In this recipe, I will show you how to make a basic sambar using toor dal (split pigeon peas) and a mix of vegetables such as drumsticks, carrots, beans, and eggplant.


Ingredients:

  • 1 cup toor dal (split pigeon peas)
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2-3 green chilies, slit
  • 1 small piece of tamarind, soaked in water
  • 2 cups mixed vegetables (drumsticks, carrots, beans, eggplant)
  • 1 teaspoon turmeric powder
  • 2 teaspoons sambar powder
  • 1 teaspoon red chili powder (optional)
  • Salt to taste
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • A few curry leaves
  • 2 tablespoons chopped coriander leaves

Instructions:

Rinse the toor dal in water a few times and soak it for 30 minutes.

Pressure cook the dal with 3 cups of water, turmeric powder, and a few drops of oil for 3-4 whistles or until it is soft and mashed.

In a separate pan, heat oil aur add sarsho dana mustard seeds. Once they start to pop, add cumin seeds, asafoetida, and curry leaves.

Add onions and sauté until they turn translucent.

Add chopped tomatoes, green chilies, and mixed vegetables. Mix well aur sauté for kuchh minat a few minutes.

Add sambar powder, red chili powder (if using), and salt. Mix well and sauté for a minute.

Add the tamarind water (squeeze out the pulp and discard the seeds) and 1-2 cups of water. Mix well and let it come to a boil.

Reduce the flame and let it simmer for 10-15 minutes or until the vegetables are cooked.

Add the cooked dal to the vegetables and mix well.

Let it simmer for another 10-15 minutes or until the sambar reaches the desired consistency. Add water if necessary.

Garnish with chopped coriander leaves and serve hot with rice or any South Indian tiffin item.

Tips:

You can also add other vegetables like pumpkin, okra, and potatoes to the sambar.

If you don't have sambar powder, you can make your own by dry roasting and grinding coriander seeds, cumin seeds, fenugreek seeds, black peppercorns, mustard seeds, and red chili powder.

Adjust the amount of tamarind water and red chili powder according to your taste.

You can also add a teaspoon of jaggery or sugar to balance the flavors.

To make the sambar more flavorful, you can add a tablespoon of ghee (clarified butter) at the end.
