 Pulao is a delicious rice dish that is popular in many parts of the world. It is a very simple yet very tasty dish which is made from a variety of ingredients. In this recipe, we will be using basic ingredients like rice, vegetables, and spices to make a tasty pulao. This recipe serves 4-6 people.


Ingredients:


2 cups of basmati rice

1 medium-sized onion, sliced

2 cloves of garlic, minced

1-inch piece of ginger, grated

1-2 green chilies, slit

2-3 green cardamom pods

2-3 cloves

1-inch cinnamon stick

1 bay leaf

1 tsp cumin seeds

1 tsp coriander powder

1 tsp cumin powder

1 tsp garam masala powder

1/2 tsp turmeric powder

Salt to taste

2-3 tbsp oil or ghee

3-4 cups of water

1 cup mixed vegetables (carrots, green beans, peas)

A handful of fresh coriander leaves, chopped

Instructions:


Wash the rice in normal water till the water runs clear. Soak the rice in enough water for 20-30 minutes.


In a deep pan, heat 2-3 tablespoons of oil or ghee on medium heat.


Add the whole spices - green cardamom pods, cloves, cinnamon stick, and bay leaf. Sauté for 1-2 minutes until fragrant.


Add the sliced onions and sauté until they turn translucent.


Add the minced garlic, grated ginger, and slit green chilies. Sauté for another minute.


Add the mixed vegetables and sauté for 2-3 minutes.


Add the coriander powder, cumin powder, garam masala powder, turmeric powder, and salt. Mix well and sauté for a minute.


Drain the soaked rice and add it to the pan. Gently stir the rice and coat it with the masala.


Add 3-4 cups of water (depending on how fluffy you want your pulao to be) and bring it to a boil.


Reduce the heat to low, cover the pan, and let the rice cook for 15-20 minutes until the water is absorbed and the rice is cooked through.


Once the rice is cooked, turn off the heat and let it sit covered for 5-10 minutes.


Fluff the rice with a fork and garnish with chopped coriander leaves.


Your pulao is now ready to serve. You can pair it with a raita or any other side dish of your choice. Enjoy!
