2 green chilies, finely chopped

1 tsp ginger-garlic paste

1 tsp cumin seeds

1 tsp coriander powder

1/2 tsp turmeric powder

1/2 tsp red chili powder

1/2 tsp garam masala powder

2 tbsp oil

Salt to taste

Fresh coriander leaves, finely chopped for garnishing

Instructions:

Heat oil in a pan on medium heat. After the oil becomes hot, add cumin seeds and temper it.

Add chopped onions and green chilies and sauté until the onions turn translucent and soft.

Add ginger-garlic paste and sauté for a minute until the raw smell goes away.

Add chopped tomatoes and mix well. Cook until the tomatoes turn mushy and soft.

Add coriander powder, turmeric powder, red chili powder, and garam masala powder. After that mix well and cook for about a minute.

Add crumbled paneer and mix well. Stir gently until the paneer is coated well with the masala.

Add salt to taste and mix well. Cook for 2-3 minutes until the paneer is heated through and the flavors are well blended.

Switch off the flame, after that garnish with finely chopped coriander leaves.

Serve hot with roti, naan, or bread.

Tips:

You can also add finely chopped capsicum or green bell pepper to the bhurji for added flavor and crunch.

You can also add a pinch of kasuri methi (dried fenugreek leaves) to the bhurji for added flavor.

Make sure to crumble the paneer finely before adding it to the pan. You can also grate the paneer if you prefer a smoother texture.

If you want a creamier paneer bhurji, you can add a tablespoon of fresh cream or milk towards the end of the cooking process.

If you want a spicier paneer bhurji, you can increase the quantity of green chilies or red chili powder.

Paneer Bhurji is a quick and easy dish that can be made in under 30 minutes. It is a great way to use up leftover paneer and can be customized to suit your taste preferences. Whether you are a vegetarian or a non-vegetarian, you will love this flavorful and satisfying dish.
