Ingredients:
- 2 cups of spinach leaves
- 1 cup of paneer cubes
- 1 medium-sized onion, chopped
- 2-3 cloves of garlic, chopped
- 1-inch piece of ginger, grated
- 1-2 green chillies, chopped
- 2-3 tablespoons of oil or ghee
- 1 teaspoon of cumin seeds
- 1 teaspoon of coriander powder
- 1/2 teaspoon of turmeric powder
- 1/2 teaspoon of red chilli powder
- 1/4 teaspoon of garam masala
- 1/4 cup of heavy cream
- Salt to taste
Instructions:
First, wash the spinach leaves and blanch them in boiling water for 2-3 minutes. Drain the water and keep the blanched spinach aside.
Heat oil or ghee in a pan on medium heat. Add Chaman seeds and let go:
Add chopped onion, garlic, ginger, and green chillies to the pan. Sauté until the onions are translucent and the mixture becomes fragrant.
Add coriander powder, turmeric powder, and red chilli powder to the pan. Mix well and fry for a few seconds.
Now, add the blanched spinach to the pan and mix well with the spice mixture. Cook for 5-7 minutes on medium heat.
Turn off the heat and let the spinach mixture cool down. Once cooled, blend the spinach mixture into a smooth puree.
Heat a separate pan on medium heat and add paneer cubes. Sauté the paneer cubes until they turn golden brown on all sides. Keep the paneer aside.
In the same pan, add the spinach puree and cook for 2-3 minutes on low heat. Add salt to taste and mix well.
Add the sautéed paneer cubes to the pan with the spinach puree. Mix well and cook for 2-3 minutes.
Finally, add heavy cream and garam masala to the pan. Mix well and cook for another minute or two.
Turn off the heat and serve hot with naan, roti, or rice.
