 Vegetable Khichdi Recipe:Khichdi is a popular Indian dish made with rice and lentils. It is a one-pot meal that is easy to make and is perfect for any occasion. It is a comfort food that is often eaten during illness or when you need a simple yet delicious meal. In this recipe, we will be making khichdi with vegetables, which adds more nutrition and flavor to the dish.


Ingredients:


1 cup rice


1 cup moong dal (split yellow lentils)


2 tablespoons ghee (clarified butter)


1 teaspoon cumin seeds


1 bay leaf


1 cinnamon stick


2 cardamom pods


1 teaspoon ginger paste


1 teaspoon garlic paste


1 green chili, chopped


1 onion, chopped


2 carrots, chopped


1 cup chopped mixed vegetables peas, broccoli, beans, cauliflower, etc.

1 teaspoon turmeric powder


1 teaspoon coriander powder


Salt to taste


4 cups water


Instructions:


Wash the rice and dal separately in water until the water runs clear. Soak it in water for 30 minutes.


In a pressure cooker or a large pot, heat the ghee over medium heat. Add bay leaves, cinnamon stick cumin, and cardamom pods. Fry for 30 seconds until the spices release their aroma.


Add the chopped onion, ginger paste, garlic paste, and green chili. Fry the onion for 1 to 2 minutes till it turns golden brown.


Add the chopped vegetables and fry for a few more minutes until they are lightly browned.


Drain the water from the soaked rice and dal and add them to the pot. Fry for a minute until they are coated with the spices and vegetables.


Add the turmeric powder, coriander powder, and salt to taste. Mix well.


Add the water to the pot and stir everything together.


(Close the pressure cooker lid and cook on high heat for 3 whistles.) If using a pot, cover it with a lid and cook for 20-25 minutes until the rice and dal are cooked through.


Once the pressure cooker has released its pressure or if using a pot, remove the lid and mix the khichdi gently.


Serve the khichdi hot with some ghee on top and some papad on the side.


Tips:


Close the lid of your pressure cooker and then cook on high flame till about 3 whistles. Some good options are potatoes, bell peppers, spinach, or even some pumpkin.


Adjust the amount of water based on your preference for the consistency of the khichdi. If you like it more soupy, you can add more water. If you like it drier, use less water.


You can also add some garam masala powder or chopped fresh coriander leaves to the khichdi for more flavor.


Khichdi is a versatile dish that can be eaten as is or paired with other dishes like raita, pickle, or yogurt. It is a nutritious and satisfying meal that is easy to make and perfect for any occasion.
