 Kadhi is a popular North Indian dish made with yogurt and besan (gram flour), and typically served with rice or chapati. It is a comfort food that is easy to make and enjoyed by many. Here's a simple recipe for kadhi:


Ingredients:


q2 cups yogurt


4 tbsp besan (gram flour)


1 tsp turmeric powder


1 tsp red chili powder


1 tsp cumin seeds


1 tsp mustard seeds


2-3 dried red chilies


2 tbsp oil


8-10 curry leaves


1 tbsp grated ginger


2-3 cloves of garlic, minced


Salt to taste


Coriander leaves for garnish


4 cups water


Instructions:


In a large mixing bowl, whisk the yogurt until it becomes smooth and creamy. Add the besan, turmeric powder, red chili powder, and salt to taste. Mix well to combine and ensure there are no lumps.


In a separate pan, heat the oil on medium heat. Add the cumin seeds, mustard seeds, and dried red chilies. Fry for a few seconds until the mustard seeds start to pop.


Add the curry leaves, grated ginger, and minced garlic. Fry for a minute or two until the garlic becomes fragrant and slightly golden.


Add the yogurt mixture to the pan and stir well to combine. Keep stirring for a few minutes until the mixture starts to boil and thicken.


Add the water and stir well to combine. Let the mixture come to a boil and reduce the flame slightly. Cover the pan and let the kadhi simmer for 30-40 minutes, stirring occasionally.


After 30-40 minutes, check the consistency of the kadhi. It should be slightly thick and creamy. Adjust the seasoning to taste.


Garnish with coriander leaves and serve hot with rice or chapati.


Tips:


Make sure to whisk the yogurt until it is smooth and creamy, otherwise the kadhi may become lumpy.


You can adjust the spiciness of the kadhi by adding more or less red chili powder.


If you don't have curry leaves, you can skip them or use dried curry leaves instead.


You can also add vegetables like onions, potatoes, or okra to the kadhi for extra flavor and nutrition.
