Ingredients:


20 baby potatoes

2 onions, chopped

2 tomatoes, chopped

1 tablespoon ginger-garlic paste

1/2 cup yogurt

1/2 cup cream

1/2 teaspoon turmeric powder

1 teaspoon red chili powder

1 teaspoon coriander powder

1 teaspoon cumin powder

1 teaspoon garam masala powder

1 bay leaf

2 cardamom pods

2 cloves

1 cinnamon stick

Salt to taste

Oil for frying and cooking

Instructions:


Wash the baby potatoes and pat them dry. Then, using a fork, prick them all over to allow them to cook evenly.


Heat enough oil in a frying pan to deep fry the potatoes. Once the oil is hot, carefully add the potatoes and fry them until they turn golden brown. Remove them from the oil and keep them aside.


In a separate pan, heat some oil and add the bay leaf, cardamom pods, cloves, and cinnamon stick. Let the spices fry for a few seconds until they release their aroma.


Put chopped onion in a pan and then fry till it becomes golden.


Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.


Add chopped tomatoes and then cook till they become soft.


Add the turmeric powder, red chili powder, coriander powder, cumin powder, and garam masala powder to the pan. Mixing well, cook it for about a minute or a little more.


Add the yogurt to the pan and mix well. Let it cook for a few minutes until the mixture becomes creamy.


Add the cream to the pan and mix well. Cook for another minute.


Add salt to taste and mix well.


Add the fried potatoes to the pan and mix them gently with the gravy. Cover the pan with a lid and let the potatoes cook on low flame for about 10-15 minutes. This will allow the flavors to blend together and the potatoes to absorb the flavors of the gravy.


Garnish with chopped coriander leaves and serve hot with rice or Indian bread.
