 Dhokla is a popular Indian snack that originated in the state of Gujarat. It is a steamed savory cake made with a fermented batter of gram flour, water, and spices. Dhokla is a versatile dish that can be served as a breakfast, snack, or even as a main course. It is light, fluffy, and has a tangy flavor. In this recipe, I will guide you on how to make dhokla at home.

Ingredients:

  • 2 cups gram flour (besan)
  • 1/2 cup yogurt (dahi)
  • 1 tsp ginger paste (adrak)
  • 1 tsp green chili paste
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp fruit salt (eno)
  • 1 tbsp oil
  • 1 cup water
  • 1 tbsp lemon juice
  • 1 tsp mustard seeds (rai)
  • 2-3 green chilies, chopped
  • 8-10 curry leaves
  • 1/4 cup chopped coriander leaves

Instructions:

In a mixing bowl, take 2 cups of gram flour (besan) and add 1/2 cup of yogurt (dahi). Mix it well to form a smooth batter.

Add 1 tsp of ginger paste (adrak), 1 tsp of green chili paste, 1 tsp of salt, and 1 tsp of sugar to the batter. Mix well.

Slowly add 1 cup of water to the batter and mix well to form a smooth and thick batter. The batter should be of pouring consistency, neither too thick nor too thin.

Add 1 tbsp of oil to the batter and mix well.

Grease a plate or a steamer with oil and keep it ready.

In a separate small bowl, mix 1 tsp of fruit salt (eno) and 1 tbsp of lemon juice. Add this (milaye)mixture to the batter aur mix well.

Pour the batter into the greased plate or steamer and steam it for 15-20 minutes or until it is cooked and a toothpick inserted in the center comes out clean.

Once the dhokla is cooked, take it out of the steamer and let it cool down.

Once the dhokla has cooled down, cut it into pieces of your desired shape and size.

For the tempering, heat 2 tbsp of oil in a small pan. Add 1 tsp of mustard seeds (rai), 2-3 chopped green chilies, and 8-10 curry leaves to the pan. Let it crackle for a few seconds.

Pour the tempering over the cut dhokla pieces and garnish with chopped coriander leaves.

Your delicious and fluffy dhokla is now ready to be served. You can serve it with green chutney or tamarind chutney. Dhokla is a healthy and low-fat snack that can be enjoyed by everyone.
