 Chicken curry is a classic dish that has been enjoyed all over the world. It is a delicious and hearty meal that is perfect for dinner, and it can be served with rice, naan bread, or any other side dish of your choice. Here is a simple and easy-to-follow recipe for chicken curry that serves four people.


Ingredients:


500g chicken breast, cubed

1 large onion, diced

3 cloves of garlic, minced

1 tsp ginger paste

2 tbsp vegetable oil

2 tsp curry powder

1 tsp cumin powder

1 tsp coriander powder

1/2 tsp turmeric powder

1/2 tsp paprika

1/2 tsp cayenne pepper

400ml can of chopped tomatoes

200ml coconut milk

Salt and pepper to taste

Fresh coriander leaves for garnish

Instructions:


Heat sweet oil in a large or small pan on low heat. Once the oil is hot, add the onions and sauté until they are soft and translucent.


Add the garlic and ginger paste and cook for another minute until fragrant.


Add the chicken to the pan and cook until browned on all sides.


In a small bowl, mix together the curry powder, cumin powder, coriander powder, turmeric powder, paprika, and cayenne pepper.


Add the spice mixture to the pan and stir well to coat the chicken and onions.


Add the chopped tomatoes to the pan and stir well. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes until the chicken is cooked through.


Stir in the coconut milk and let the curry simmer for another 5-10 minutes.


Season with salt and pepper to taste.


Serve the chicken curry hot, garnished with fresh coriander leaves.


Tips:


For a spicier curry, add more cayenne pepper or fresh chillies.

If you prefer a milder curry, reduce the amount of curry powder and cayenne pepper.

You can substitute the chicken breast with chicken thighs or a mix of chicken thighs and drumsticks for a more flavorful and tender meat.

If you don't have all the spices listed in the recipe, you can use a store-bought curry powder instead.

The curry can be made ahead of time and reheated before serving.

Some leftovers can also be stored in the fridge for 2 days or in the freezer for up to 3 months.
