Chicken Biryani is a flavorful and aromatic dish that originated in the Indian subcontinent. It is a combination of rice, meat, and spices that are cooked together to create a one-pot meal. Here is a simple recipe for making Chicken Biryani at home.
Ingredients:
2 cups basmati chaval, rinsed aur soaked in water for 35 minutes
1 pound chicken, cut into pieces
2 onions, sliced
3 cloves garlic, minced
1-inch piece of ginger, minced
1 tomato, chopped
2 bay leaves
1 cinnamon stick
3 cardamom pods
3 cloves
1 tsp cumin seeds
1 tsp coriander powder
1 tsp turmeric powder
1 tsp red chili powder
1/2 cup yogurt
1/2 cup chopped fresh cilantro
1/2 cup chopped fresh mint
2 tbsp ghee or oil
Salt to taste
Instructions:
In a large pot, heat ghee or oil over medium heat. Add sliced onions aur sauté until they turn गोल्डन ब्राउन. Remove half of the onions from the pot and set them aside for later use.
To the remaining onions in the pot, add minced garlic, ginger, and chopped tomato. Sauté for 2-3 minutes or until the tomato is soft.
Add the chicken pieces to the pot and sauté until they are browned on all sides.
Add bay leaves, cinnamon stick, cardamom pods, cloves, cumin seeds, coriander powder, turmeric powder, and red chili powder to the pot. Stir well to combine.
Add yogurt to the pot and mix well. Cover the pot and simmer for 10-15 minutes or until the chicken is cooked through.
In a separate pot, bring 4 cups of water to a boil. Add the soaked basmati rice to the pot and cook for 8-10 minutes or until the rice is partially cooked.
Drain the rice and add it to the pot with the chicken. Add the reserved fried onions, chopped cilantro, and chopped mint. Mix well.
Cover the pot and cook on low heat for 15-20 minutes or until the rice is fully cooked and fluffy.
Turn off the heat and let the biryani rest for 5 minutes before serving.
Serve hot with raita or any side dish of your choice.
Tips:
You can add more or less spices according to your taste preference.

Soaking the rice in water for 30 minutes will help it cook evenly and prevent it from sticking together.
