cake recipe - Vanilla Sponge Cake Recipe

 Cake is a sweet and indulgent dessert that is enjoyed by people all around the world. Ingredients:

  • 250g unsalted butter, softened
  • 250g caster sugar
  • 4 large eggs
  • 250g self-raising flour
  • 2 tsp baking powder
  • 2 tsp vanilla extract
  • 3-4 tbsp milk

Instructions:

Preheat your oven to 180°C/160°C fan/gas mark 4. Grease and line two 20cm cake tins with baking paper.


In a large mixer bowl, cream the butter and sugar until light and fluffy. This should take around 5 minutes using an electric mixer.


Add the eggs to the mixture one at a time, beating well after each addition.


Sift the flour and baking powder into the bowl and fold into the mixture using a metal spoon or spatula. This will help to keep the batter light and airy.


Stir in the vanilla extract and milk until the batter is smooth and well combined.


Divide the batter evenly between the two prepared cake tins, smoothing the surface with a spatula.


Bake in the preheated oven for 25-30 minutes, or until the cakes are golden brown and a skewer inserted into the centre of the cakes comes out clean.


Remove the cakes from the oven and leave to cool in the tins for 5 minutes, before transferring them to a wire rack to cool completely.


Once the cakes have cooled, you can decorate them with your choice of frosting or toppings. Some popular options include buttercream, cream cheese frosting, whipped cream, or fresh fruit.


To make a simple buttercream frosting, beat 250g of softened butter in a mixing bowl until light and fluffy. Gradually sift in 500g of icing sugar, beating well after each addition, and add a splash of milk to loosen the mixture if necessary. Stir in a teaspoon of vanilla extract for flavour.


Once the cakes are cool, you can sandwich them together with a layer of frosting, before spreading the remaining frosting over the top and sides of the cake.


Decorate the cake with any additional toppings of your choice, such as fresh fruit, chocolate chips, or sprinkles.
