 Apple Pie Recipe


Ingredients:


For the crust:


2 1/2 cups all-purpose flour


1 tsp salt


1 tbsp sugar


1-2 cups unsalted butter, cold or cut into cubes


1/4 to 1/2 cup ice water


For the filling:


8 cups thinly sliced apples (about 8 medium-sized apples)


3/4 cup granulated sugar


1 tsp ground cinnamon


1/4 tsp ground nutmeg


1/4 tsp salt


2 tbsp unsalted butter


2 tbsp all-purpose flour


1 tbsp lemon juice


1 tsp vanilla extract


Instructions:


Preheat your oven to 375°F (190°C).


Make the crust: In a large mixing bowl, whisk together the flour, salt, and sugar. Add the cold butter cubes and use a pastry blender or your fingertips to mix the butter into the flour until the mixture resembles coarse sand.


Drizzle in the ice water, a tablespoon at a time, and stir until the dough comes together. You may not need that much water, or you may need a little extra.  It needs to be moist enough to cook together, not sticky.


Divide the dough into two equal portions and flatten each into a disc. Wrap each disc in plastic wrap and refrigerate for at least 30 minutes.


Make the filling: In a large mixing bowl, toss together the sliced apples, sugar, cinnamon, nutmeg, and salt until well combined.


Melt butter in a saucepan on low heat. Add the flour and stir until smooth. Add vanilla extract and lemon juice and mix.


Pour the butter mixture over the apples and toss until the apples are evenly coated.


Roll out one disc of dough on a lightly floured surface to a 12-inch (30-cm) circle. Transfer the dough to a 9-inch (23-cm) pie dish and trim the edges.


Pour the apple filling into the crust, spreading it out evenly.


Roll out the second disc of dough to a 12-inch (30-cm) circle. Use a pastry cutter or sharp knife to cut the dough into strips.


Arrange the strips over the filling, weaving them together in a lattice pattern.


Trim the edges of the lattice strips and fold the bottom crust over the edges to seal. Prick the edge of the pie or wrap it around with your fingers.


Brush the top of the pie with an egg wash made from one egg beaten with a tablespoon of water.


Bake that pie for 45-55 minutes, or until the crust is golden brown and the filling is just bubbly.


Remove the pie from the oven and let it cool on a wire rack for at least 30 minutes before slicing and serving.
